HERE'S WHAT YOU'LL NEED
- 1 1/4 cup almond flour
- 1/4 cup + 1 tbsp Gingerbread Cookie THRIVE Plant Protein
- 1/4 cup + 2 tbsp maple syrup
- 1/4 cup + 2 tbsp coconut oil
- 400ml coconut milk tin
- 1/4 cup coconut sugar
- 1/2 cup melted dark chocolate
- Gingerbread men
HERE'S HOW TO MAKE IT
- Preheat oven to 180°C.
- Mix almond flour, ¼ cup protein, ¼ cup coconut oil, and ¼ cup maple syrup into a dough.
- Press dough into silicone moulds and bake for 10 mins.
- Make caramel by simmering coconut milk, coconut sugar, 2 tbsp maple syrup, 2 tbsp coconut oil, and 1 tbsp protein until thick (30-40 mins).
- Pour caramel over the baked base and freeze for 1 hour.
- Top with melted chocolate and gingerbread men, then freeze until set.
