Here's what you'll need:
- 1/2 cup of Cookie Flour (mix of oat & chickpea flour)
- 1 serving NH Vanilla Pancake Batter THRIVE Plant Protein
- 3/4 tbsp baking powder
- 1 tbsp almond or peanut butter
- Pinch of salt
- 1/4 cup almond milk
- 1/2 tsp vanilla extract
- Sweetener of choice (2-3 drops of vanilla stevia)
- Handful sugar free dark chocolate chips
Here's how you'll make it:
- Pre-heat the oven to 200 degrees celsius.
- In a mixing bowl combine the flour, protein powder, baking powder, salt and mix until well combined. Once mixed, add in the milk, nut butter, vanilla extract & sweetener. Mix well until all wet & dry ingredients combined.
- Add in a handful of sugar free dark chocolate chips and mix until well combined.
- Grease a mini skillet (or baking dish of your choice) with cooking spray and pour in the cookie mixture.
- Bake in the oven for 20-25 minutes (until the cookie is golden brown).
- Top with ice cream of choice and ENJOY
